布丁容器先塗一層奶油會容易脫模,蛋打勻備用(不要打進空氣)。

糖加冷水煮到泡沫變細的焦糖色(糖未溶解時不能攪拌)熄火,倒入熱水定色。

布丁液:糖加鮮奶中火拌煮到沒有沙沙的感覺即熄火。

將煮過的鮮奶慢慢倒入蛋液中拌勻、過濾後倒進焦糖杯中、包錫箔紙。

平底鍋鋪一塊紗布(棉抹布也行~可緩衝沸騰的撞擊),將水先煮沸騰,放進布丁杯。

蓋上鍋蓋水沸騰後轉中火蒸十分鐘就熄火,不開鍋蓋續悶十分鐘,

打開一個看看,很OK^^降溫後冷藏至少二小時。
